I'm at a loss to figure out vegetables for Cordelia's weekly, going to see the social worker lunches. Tomatoes definitely don't work, and she's been iffy on peppers. I've been trying cucumbers, but it's been about 50-50 whether or not she likes them. She says that some of them just taste bad, and all I can do then is throw the dratted thing out. I guess I'll have to go with carrots. She doesn't always like those, but at least I can eat them if she doesn't.

Just thoughts, but what about snap peas, pickles, green beans, broccoli.

Does it have to be vegetable? Can it be fruit instead...that opens up more options.

bento communities have great ideas for getting veggies into kids lunches.

no problem! Also, if she likes pickles, pickles are still veggies!! Mom used to send me with dill pickles or pickled beets (well rinsed as they dye everything red, I'd looked like I had blood for lunch after eating them)

Forgive me if I list things you've tried. These are things I like:
broccoli florets (cooked or raw)
cauliflower florets (cooked or raw)
watercress
radishes (I adore these)
olives (some children like olives)
baby sweet corn
sugar snap peas
green beans (cooked or raw)
