To make coffee with very low acidity, put 1/4 cup grounds in a quart jar of water, let sit in the fridge overnight, and then strain (we pour it through a paper filter into a fresh quart jar). Use 1oz of this liquid to 7oz hot OR cold water to make the proper dilution for hot-brewed coffee.
This is the only coffee I can drink any more, but, conversely, the concentrate is so smooth and easy on the stomach that my son drinks it /straight/ quite often. He is, however, a java junkie.
