I think a lot of people who go to many cons on a budget do that sort of thing. We have a hot plate that we bought when we were going to GenCon regularly. We won't be taking it this time because of there being a microwave, but we have it. We have a large cooler that we use for things like that, too.
For a two day convention, we go more with prepackaged, open the box and eat stuff that doesn't need to be kept cool.
I've been meaning to ask, for myth_fan, would it be all right if I posted something asking for help in tracking down a Norse mythology related short story that I read some time in the 1970s? I thought at the time that it was an actual myth, but I've never encountered it anywhere else, and I don't know what book I found it in. It's a long shot that anyone will recognize it, but I think there's a better chance on that community than elsewhere..
