I have no idea if this runs into any of your food intolerances, but I'll toss this out there just in case. Back when I was trying to figure out what was causing my digestive problems, I experimented with cutting out a lot of different things. When I was trying "no sugar", I discovered the technique of blending coconut oil and/or butter into coffee, and fell completely in love with it.

It is the only way I can drink coffee with no sugar. You add a tablespoon or two of whichever fat you prefer (or both), and whip it up with an immersion blender. The taste is rich and creamy and in the coconut version, at least, it masks nearly all of the bitter notes. I've never tried the all-butter version, since dairy turned out to be the allergen at the root of all my problems, but my husband says it's just as good.

Coconut oil has lots of medium-chain triglycerides, which are a very easily absorbable type of fat, so they might give you something approaching the energy boost you get from sugar -- but I can't remember if you tolerate coconut. (There are also purified MCT oils you can use, for the energy boost with no flavor, but that would be a more expensive experiment.)
