::grumbles::

It's not big on the cosmic scale, but... Delia wanted to make cookies this afternoon. She asked to and begged to. I knew we didn't have any chocolate chips, so I cruised a copy of Joy of Cooking, looking for something easy to make. I settled on butterscotch brownies because they're simple and don't require complicated ingredients.

I got the butter melted and the brown sugar dissolved and then discovered that the one or two eggs I remembered having is actually zero eggs. ::bangs head::

Delia and I could, in theory, head out by bus to get eggs. It would only take about an hour and a half, at most. If we got the timing just right, it might only be an hour. (I'd have to look up the buses to be sure of the best case timing. There's an in-bound bus once every half an hour, but I don't know how long the lag is between the out-bound that would drop us off and the in-bound that would take us home.) We'd also have to cross a couple of busy streets at a busy time of day without lights.

It's not happening.

We could wait for Scott to pick some up on his way home. He's working late (unless we get lucky and something changes) and so won't be home until nearly eight, four hours from now. I don't want to have him detour because (a) it's been a long enough day already and (b) he's going to have to work on the kitchen sink when he gets home. The drainage pipes are leaking again so that we can't use the sink. It's an easy enough fix for someone whose hands work right (meaning not me), but it takes time.

::grumbles:: I had started looking forward to those cookies.

Thank goodness I've got somewhere to vent.

Egads, I hate that! There's nothing worse than being in the middle of a recipe and discovering major ingredients are missing. :-(

Augh! I'm so sorry to hear that. I wish I had eggs at the office. :-) But all I have is yogurt.

Argh! How frustrating!

That's one of the reasons I keep soy protein powder or "soy flour" around. It can sub for eggs in many applications in a pinch. I have very successfully made pancakes with no eggs by using it, and other baked or griddled things. If that is something your diets allow, which I am not sure about, it might be a thing to try.

Oh man, that is frustrating!!!

I keep some of those little boxes of pasteurized eggs in the freezer for just such an emergency. Egg Beaters or Just Egg Whites or whatever. Barring power outages, it can stay in the freezer forever, and you can thaw it out in the microwave pretty quickly. Also, because the eggs are pasteurized, it's safe to eat the batter. :)
